老山不是一个品种，而是一个标准，简单地说醇厚的南印度檀香才是老山。前提是必须要存放一定的时间，少则数年，多则几十年上百年。
檀香在中国的使用历史非常悠久，但是檀香是由原产地印度引入中国。印度出产的老山檀具有香味持久、色白偏黄、油质大等特点，是品质最上乘的檀香木。
檀香新料的水分蒸发有时候比想象的要慢，而损失水分后沉香的密度和重量变化更大。老山檀香沉水，说明密度大，油性大，但不能说明香味醇正。因为新料局部含油高的部分密度也会大，但是很多料子时间久了味道都一样，和密度完全无关。
檀香的颜色深不深，也跟味道没有直接关系。因为时间最重要，充分醇化的东西才能有好的味道表达。有些檀香颜色很深但不是老山料！
