老山不是一个品种,而是一个标准,简单地说醇厚的南印度檀香才是老山。前提是必须要存放一定的时间,少则数年,多则几十年上百年。
檀香在中国的使用历史非常悠久,但是檀香是由原产地印度引入中国。印度出产的老山檀具有香味持久、色白偏黄、油质大等特点,是品质最上乘的檀香木。
檀香新料的水分蒸发有时候比想象的要慢,而损失水分后沉香的密度和重量变化更大。老山檀香沉水,说明密度大,油性大,但不能说明香味醇正。因为新料局部含油高的部分密度也会大,但是很多料子时间久了味道都一样,和密度完全无关。
檀香的颜色深不深,也跟味道没有直接关系。因为时间最重要,充分醇化的东西才能有好的味道表达。有些檀香颜色很深但不是老山料!

The water evaporation of new sandalwood material is sometimes slower than expected, but the density and weight of agarwood change more after water loss. The deep water of old sandalwood shows that it has high density and oil property, but it can't show that the fragrance is mellow. Because the local oil content of new material is high, the density will also be high, but many materials taste the same after a long time, which has nothing to do with the density.
The color of sandalwood has no direct relationship with the taste. Because time is the most important thing, fully aged things can have good taste expression. Some sandalwood is very dark but not old-fashioned!
